Appetizer: Baked Sweet Potato Fries with Sweet Chili Dipping Sauce
For the fries, you will need
- Olive Oil
- 5 sweet potatoes, peeled and sliced thin
- 1/2 teaspoon chili powder
- 1 tsp salt
- 1/2 tsp black pepper
Preheat oven to 450 degrees F.
Line an oven tray with butter paper. In a large bowl toss sweet potatoes with just enough oil to coat. Sprinkle with salt, pepper and chili powder. Spread them in single layer on prepared baking sheet. Bake until they are tender and golden brown, about 20 minutes. Cool for 5 to 10 minutes before serving.
For the sauce, you will need
- 500g long fresh red chilies
- 3 garlic cloves, peeled
- 2 cups vinegar
- 3 cups sugar
Chop 100g of chilies and place in the bowl of a blender. Halve and deseed the remaining chilies, coarsely chop and place in the blender. Add garlic and 1 cup vinegar. Process until finely blended.
Add the chili mixture, remaining vinegar and caster sugar to a large saucepan over a low heat. Cook, stirring for 5 minutes until the sugar dissolves. Increase heat and bring to a boil. Reduce heat and simmer, stirring occasionally, until the sauce thickens.
Cool and serve up your healthy sweet potato fries and sweet chili sauce!
