This decadent Indian dessert comes to us from the grand tables of the Mughal Emperors. With its intoxicating aroma and rich flavor, it is truly a dish fit for the kings!
You will need:
- 3 tbsp Kishmish (Raisins)
- 20 Kaju (Cashew nuts), chopped
- 4-5 saffron (kesar) strands
- 1/3 tsp cardamom (elaichi) powder
- 9 Red Carrots, peeled and grated
- 1 liter Milk
- 4 tbsp pure ghee
- 12 tbsp sugar
On a medium flame, combine milk and carrots in a pan. Bring the mixture to a boil and then simmer, stirring in between till the grated carrots are cooked and the milk has reduced to 1/3. Add ghee, sugar and cardamom powder. Keep stirring and cooking on a low flame. Add in the cashews, saffron and raisins. When all the milk has evaporated, take it off the flame.
Your delicious gajar ka halwa is ready! Serve it up hot, garnished with slivers of cashew. Bon Apetit!
