Dive into a delicious bowl of greens with this easy to make salad, flavored with a yummy buttermilk dressing! Broccoli is loaded with vitamins and folic acid, giving your day the healthy boost it needs.

You will Need

For the Buttermilk Dressing

  • ¾ cup Buttermilk
  • 2 tbsps Olive Oil
  • 2 tbsps Vegetable Oil
  • 1 tbsp finely grated Lemon Zest
  • 1 tbsp fresh Lemon Juice
  • 1 tsp Vinegar
  • A pinch of Black Pepper
  • Salt to taste

For the Salad

  • 1 Onion, finely chopped
  • 1 large head of Broccoli, cut into bite-size florets
  • Salt
  • 1 cup boiled Channa
  • ½ cup Mint, coarsely chopped
  • ¼ cup Coriander, coarsely chopped
  • ¼ cup Peanuts, coarsely chopped

Whisk the buttermilk, olive oil, vegetable oil, lemon zest, lemon juice, rice vinegar, pepper, and salt in a medium bowl. Taste and season as needed, set aside to chill.

Stir together onion and 2 tbsp buttermilk dressing in a small bowl and set aside. Cook broccoli in a large pot of boiling salted water for 2 minutes until crisp-tender. Transfer broccoli to a bowl of ice water to cool. Drain and dab dry. Toss boiled channa and 2 tbsp buttermilk dressing in a large bowl and season with salt. Add dressed onions, broccoli, coriander, mint, peanuts, and 2 tbsp buttermilk dressing to channa and toss to combine. Et Voila! Your salad is ready.
