You will Need
For the Buttermilk Dressing
- ¾ cup Buttermilk
- 2 tbsps Olive Oil
- 2 tbsps Vegetable Oil
- 1 tbsp finely grated Lemon Zest
- 1 tbsp fresh Lemon Juice
- 1 tsp Vinegar
- A pinch of Black Pepper
- Salt to taste
For the Salad
- 1 Onion, finely chopped
- 1 large head of Broccoli, cut into bite-size florets
- 1 cup boiled Channa
- ½ cup Mint, coarsely chopped
- ¼ cup Coriander, coarsely chopped
- ¼ cup Peanuts, coarsely chopped
Whisk the buttermilk, olive oil, vegetable oil, lemon zest, lemon juice, rice vinegar, pepper, and salt in a medium bowl. Taste and season as needed, set aside to chill.
Stir together onion and 2 tbsp buttermilk dressing in a small bowl and set aside. Cook broccoli in a large pot of boiling salted water for 2 minutes until crisp-tender. Transfer broccoli to a bowl of ice water to cool. Drain and dab dry. Toss boiled channa and 2 tbsp buttermilk dressing in a large bowl and season with salt. Add dressed onions, broccoli, coriander, mint, peanuts, and 2 tbsp buttermilk dressing to channa and toss to combine. Et Voila! Your salad is ready.
